Cauliflower Thoran




Ingredients
  1. Cauliflower florets – separated from 1 Big Cauliflower
  2. Finely chopped Onions – 1 medium
  3. Slit Green Chillies – 2 medium
  4. Finely Chopped Garlic – 3 or 4 cloves
  5. Curry Leaves – A sprig
  6. Oil – 2 tbsp
  7. Mustard Seeds – 1/4 tsp
  8. Garam Masala Powder – 1 tsp
  9. Turmeric Powder – 1/2 tsp
  10. Chilly Powder – 1 tsp
  11. Salt – as required
  12. Grated Coconut – 1/2 Cup
  13. Grated Cumin (Jeera) – 1/4 tsp
Directions
  1. Wash and clean the cauliflower florets and keep aside.
  2. Mix together coconut, 1/4 tsp turmeric powder and cumin using hands or you can coarsely grind everything together.
  3. Heat 2 tbsp oil in a pan and splutter mustard seeds.
  4. Add onions, curry leaves, green chillies, grated garlic and saute till the onions are translucent.
  5. Add 1 tsp garam masala powder, 1/4 tsp turmeric powder, 1 tsp red chilly powder and saute for a minute.
  6. Now, add the cauliflower florets along with required amount of salt and mix well so that the florets are coated with the masala.
  7. Cover and cook for 5 minutes on medium heat stirring occasionally.
  8. Open the lid and add the coconut mixture and combine everything.
  9. Cover and cook for another 10-15 minutes on low heat till the cauliflower is cooked.
  10. Open and cook on high heat for another 2 minutes until all water has evaporated.
