Tomato (Thakkali) Curry




Ingredients
  1. Chopped Tomatoes – 3 ripe juicy ones
  2. Sliced Onions – 1 medium
  3. Green Chillies – 4 small ones
  4. Minced Ginger – 1 tsp
  5. Turmeric Powder- 1/4 tsp
  6. Red Chilly Powder – 2 tsp
  7. Garam Masala Powder – 1/2 tsp
  8. Salt – to taste
  9. Oil — 2 tbsp
  10. Water – as needed
For Grinding
  1. Grated Coconut – 1 cup
  2. Cumin (Jeera) – 1/4 tsp
  3. Turmeric Powder – 1/4 tsp
  4. Water – 1/2 cup
Seasoning
  1. Oil – 1 tbsp
  2. Mustard Seeds – 1/4 tsp
  3. Shallots/Pearl Onions (Kunjulli) – 4 or 5
  4. Curry Leaves – A sprig
Directions
  1. Heat oil in a pan and saute onions, ginger and green chillies until the onions become translucent.
  2. Add the tomatoes along with salt and cook until mashed.
  3. Meanwhile. grind coconut and other ingredients to form a paste and keep aside.
  4. Add turmeric, chilly and garam masala powders to the mashed tomatoes and stir fry for a minute.
  5. Pour the coconut paste along with water and mix well.
  6. Bring the curry to a slow boil on medium heat.
  7. Season with mustard, shallots and curry leaves.
