Sun-Dried Tomato, Chicken and Potatoes

Serves: 4
Prep time: 5mins
Cooking time: 25-30mins

Ingredients
  1. Medium smooth cut into small chunks Potatoes - 4
  2. Cut into chunks, Chicken breasts - 4
  3. Sun - dried Tomato paste - 2 tbsp
  4. Olive Oil - 1 tbsp
  5. Sliced Garlic - 2 cloves
  6. Whole mini peppers - 5
  7. Halved Cherry tomatoes - 10
  8. Chopped fresh Parsley - 2 tbsp
  9. Salt - for taste
  10. Pepper Powder - for taste
Directions
  1. Preheat oven to 200 degree celsius. Place all of the ingredients, except parsley, on to a large baking tray, or use two trays if needed.
  2. Toss together to combine. Spread out into an even layer on the trays, then season with Salt and Pepper.
  3. Cook in the oven for 25 - 30mins until Chicken is cooked through and vegetables are browned and tender. Scatter with parsley and Serve.
