Ingredients
- Medium smooth cut into small chunks Potatoes - 4
- Cut into chunks, Chicken breasts - 4
- Sun - dried Tomato paste - 2 tbsp
- Olive Oil - 1 tbsp
- Sliced Garlic - 2 cloves
- Whole mini peppers - 5
- Halved Cherry tomatoes - 10
- Chopped fresh Parsley - 2 tbsp
- Salt - for taste
- Pepper Powder - for taste
- Preheat oven to 200 degree celsius. Place all of the ingredients, except parsley, on to a large baking tray, or use two trays if needed.
- Toss together to combine. Spread out into an even layer on the trays, then season with Salt and Pepper.
- Cook in the oven for 25 - 30mins until Chicken is cooked through and vegetables are browned and tender. Scatter with parsley and Serve.
